Chocolate Chip Oatmeal Cookie Cups with Cinnamon Cream Cheese Filling

Melissa Bastow

Are you craving something that should taste like fall?!

Cinnamon and cream cheese is one of my favorite flavor combinations.  I use it in a lot of my fall desserts.  Throwing some chocolate and oatmeal into the mix seems like the perfect treat to eat while donning your favorite fall sweater!

Want to live a little on the edge?

Here's the catch:  I didn't actually want to go to the effort of actually making this fall dessert.  So I asked AI to create a recipe for me and then create a picture to go with it.  I mean, the recipe APPEARS to be one that would work.  And it SOUNDS delicious.  So I'm sure it'll be fine, right?

Just be warned, you have to be a little bit of a risk taker to make these treats.  Are you game?!

Ingredients:

For the Cookie Cups:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 cups old-fashioned oats
  • 1 1/2 cups semi-sweet chocolate chips

For the Cinnamon Cream Cheese Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease the bottom of a muffin tin.

  2. Cream Butter and Sugars: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each egg is well incorporated before adding the next one. Stir in the vanilla extract.

  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.

  5. Combine Wet and Dry Ingredients: Gradually add the dry mixture into the butter mixture, stirring until just combined.

  6. Add Oats and Chocolate Chips: Gently fold in the oats and chocolate chips until evenly distributed.

  7. Form Cookie Cups: Take portions of the cookie dough and press them into the bottom and up the sides of each muffin cup, creating a well in the center.  Or use this cool pan that makes creating cookie cups SUPER easy!

  8. Bake: Bake in the preheated oven for about 12-15 minutes, or until the edges are golden brown. Allow the cookie cups to cool in the muffin tin.

  9. Prepare Cinnamon Cream Cheese Filling: In a mixing bowl, beat together the softened cream cheese, powdered sugar, ground cinnamon, and vanilla extract until smooth and creamy.

  10. Fill the Cookie Cups: Once the cookie cups have cooled, carefully remove them from the muffin tin. Spoon the cinnamon cream cheese filling into the wells of the cookie cups.

  11. Optional Step (for extra flair): Sprinkle a pinch of cinnamon and extra chocolate chips on top of the filling for a decorative touch.

  12. Chill and Serve: Place the filled cookie cups in the refrigerator for at least 1 hour to allow the filling to set. Serve and enjoy your creative Chocolate Chip Oatmeal Cookie Cups with Cinnamon Cream Cheese Filling!

Maybe someday I'll get around to making this recipe.  Maybe I'll just dream about it tasting really good and drool while not consuming the calories.  Because in my mind, they definitely seem tempting.

What do you think - to bake or not to bake?

Disclaimer - This was generated by AI.  The recipe and the picture.  I think I made that pretty clear before, but just in case you missed it, here it is again - this was made by AI.  And I have no idea if it will work right, or how many it makes, or if it even tastes good.  Also I threw in a link to an Amazon affiliate link to a pan.  Just so you know.
