Green Velvet Cupcakes

These green velvet cupcakes will make your St. Patrick's day lucky and tasty! They're easy to whip up and make great party snacks and dessert. Pair them with some gold coins, and everyone will be happy!
Ingredients:
- 2.5 cups all-purpose flour
- 2 tbsp cocoa
- 1 tbsp baking soda
- ½ tsp salt
- 1.5 cups granulated sugar
- 2 eggs
- 1 vanilla bean
- 1 cup oil
- 1 tbsp vinegar
- 1 cup buttermilk
- Green gel food coloring
- Ready-made frosting
- Gold sprinkles
Directions:
Line a muffin tin with papers and preheat oven to 350 degrees F.
In a large bowl, sift together flour, cocoa, baking soda, and salt. Set aside.
Using an electric mixer, start mixing sugar and eggs until creamy. Slice vanilla bean and scrape for the inner content – add to your egg and sugar mixture. Continue mixing.
Add oil, vinegar, and buttermilk. Once your wet ingredients have thoroughly combined, slowly add your bowl of dry ingredients (I like to add it in thirds).
Once mixed, add 1 to 2 tsp of green gel food coloring. Your batter should come out a very rich emerald.
Fill your muffin tin with the cupcake batter about ¾ in each cup. Bake for 15-18 minutes or until the cupcakes have passed the “toothpick test.”
Allow your cupcakes to fully cool. Using a piping bag, frost each cupcake and add gold sprinkles. Enjoy your lucky cupcakes!
