Ham and Cheese "Sushi" Lunch Tutorial

Get creative with school lunches with this easy to make Ham and Cheese sushi roll up. It's fake sushi and safe to send to school! The best part though is that it's super fun and will make your child's day a little happier when they open their lunch box to find these!
This is what you'll need to make these ham and cheese sushi roll ups:
- 9 oz. Thin Smoked Ham
- 1 Pkg. Spinach Tortillas
- 1-2 Cups Shredded Mozzarella
- ½ -1 Cup Sour Cream
- 1-2 Small Pickle Cucumbers
- ½ -1 Cup Carrots
- ½ -1 Cup Shredded Cabbage
Dice the cheese so that it looks like rice. Since it's already shredded it won't take too long to make it small enough.
Cut up the carrots and cucumbers into matchstick size pieces.
Lay out a tortilla and sprinkle a layer of cheese over it evenly. Spread a little sour cream across the top edge of the tortilla, and place 4 or 5 pieces of folded ham down the center on top of the cheese.
Add a layer of carrots, cucumbers, and cabbage on top of the meat. Don't put too much because you want it to roll tightly.
Starting on the opposite side from the sour cream, tightly roll up the tortilla. Press it securely at the end - the sour cream will help hold it together. Slice the roll into pieces about 1 ½ inches wide and set on a plate to resemble sushi.
You can put a little ranch on top to decorate (and to give it a little more flavor).
Make sure if you send these to school with your child that the sushi rolls are secure in a container. Especially if your kids are like mine and throw, stomp, smash, jump on, and whack each other with their backpacks on the way to school every morning.
