Mini Apple Pie Recipe

For some people fall time is all about pumpkin spice, but not me. When the weather starts turning cool I can't get enough of apples and cinnamon. The smell is amazing, and it just taste....like autumn. If you're like me, these easy to make mini apple pies are the perfect treat!
What you'll need:
- Pie Crust (I just like to buy mine premade - it's so much easier)
- 2 Large Apples,peeled, cored and chopped
- 2 Tablespoons of Sugar
- 1 Tablespoon of Flour
- 4 Tablespoons of Butter, softened
- 1/2 Teaspoon of Cinnamon
- 1 Teaspoon of Vanilla
Preheat your oven to 425 degrees. Then combine the chopped apples, flour, sugar, cinnamon and vanilla in a medium sized mixing bowl.
Roll your pie crust out and use a round cookie cutter (or even the top of a peanut butter jar) to create smaller circles.
Scoop a spoonful of the apple mixture into the center of each pie crust circle. Make sure you're not overfilling them, you'll want a decent amount of crust on the sides.
Fold up the edges of the pie crust to create a little bowl for your apple filling.
Place all of your mini apple pies on a cookie sheet and bake for 20 minutes. Let them cool a little bit, then top them with ice cream and serve. You can even sprinkle the tops with extra cinnamon and sugar if you're going for presentation and extra spices (and why wouldn't you be)!
