St. Patrick's Day Pudding Cups

Looking for an easy St. Patrick's Day treat that will wow?  These lucky and green pudding cups will do the trick.  They're cute, fun, and yummy!  Take them to a child's class party at school, as an office treat for your coworkers, or make them as a dessert for your family's traditional St. Patrick's Day meal!

Ingredients to make 4 cups:

  • 1 box vanilla pudding mix
  • 2 cups cold milk
  • Green gel food coloring
  • 1 cup Lucky Charms cereal
  • Whipped cream for topping
  • Green sprinkles
  • 4 Clear cups

In a large bowl mix together pudding mix, milk, and green food coloring. Whisk for 2 minutes then let it sit in the refrigerator 10 minutes to set.

Using half of the Lucky Charms, add a layer to the bottom of your plastic cups.  Try to get equal amounts in each.

Once the pudding is set, add 2-3 spoonfuls to each cup.  It will kind of seep into the cereal underneath, which looks fun from the sides of the cup.

Using the rest of the Lucky Charms add another layer to the top of each cup. 

Top with whipped cream and green sprinkles. This dessert is best served immediately (unless you really like soggy cereal).  Your guests/friends/kids are going to love it!
